A soft, dunkable cookie that tastes just like a brick. Whether you’re making them with Mocha Cream or any other flavor, you’ll definitely enjoy this high fat, low carb treat.

1 Mocha Cream Keto Brick
3T almond flour
1.5T monk fruit granular sweetener (adjust to taste before baking)
1 large egg
1/2t baking powder
1/4t xanthan gum
Preheat oven to 350°
Melt your brick in a microwave safe bowl. Stir in all ingredients except the egg. Once combined, mix in the egg and fully combine.
Line a cookie sheet with parchment paper. Form eight balls and evenly place them on the pan. (These won’t spread too much.)
With a fork, press down to help flatten the dough.
Bake for ~10 minutes or until they’re slightly browned around the edges. They’ll continue to firm as they cool.
